Shrimp Stuffed Baked Pike Recipe for Northern Pike

Ingredients: 1 cleaned pike (4-5 lb)

3/4 tsp salt

3/4 tsp white pepper

3/4 tsp paprika

1/4 tsp ginger

1 shrimp stuffing

2 cup chopped tomatoes (fresh)

1 cup clam juice or water

1/2 cup chopped onion

3 cloves

1 bay leaf

3 tbs sweet butter

2 tbs flour

4 strips lean bacon
Directions: Season fish inside & out with salt, pepper, paprika & ginger. Stuff fish & sew closed. Cook together tomatoes, water, onion, cloves & bay leaf in med size saucepan for 20 minutes. Melt butter; blend in flour & cook, stirring, over low heat until thick & smooth. Mix butter-flour with tomato mixture; cook 10 minutes then strain. Place fish in shallow roasting pan; lay bacon over fish & top with half the tomato sauce. Bake in 325 oven for 1 hour, basting during baking. Serve remaining sauce with fish.
Other Notes: When cooking any Pike dish it is very important that you clean the skin of the pike very well or remove all skin as Northern Pike secreet a protective mucus film through their skin which can taste very bad!
